Huevos con Chorizo

This is a great new way to eat eggs. There are several different ways to fix eggs Mexican style, but this one is my favorite. As I’ve said before in other blogs I love Chorizo!. I’ll eat it with anything.. lol.
This is really a fast, easy way to fix eggs. They are great to eat when it’s cold to warm you up on the inside even though they can be eaten anytime of year.
Here’s the recipe, hope you enjoy!

- 2 tbsp. oil
- 1 tsp. salt
- 1/2 onion
- 1/2 avocado sliced
- 4-6 eggs
- 1-2 tubes of chorizo
- Using non-stick skillet add oil, onions, and chorizo frying until done.
- Crack eggs over skillet spreading eggs all over chorizo.
- Let eggs and chorizo fry a little before scrambling them with plastic spatula or wooden spoon.
- Cook until done.
Serve on a plate plain or cook up some tortillas and eat as tacos adding avocado and Tia Lavoria’s Salsas.
